A 2kg tank holds about the same gas as 250 of the little 8g bulbs. That is the whole proposition, and once a kitchen has seen the bin at the end of a busy Saturday it tends to make the decision for itself.
Inside, it is the same thing: food-grade nitrous oxide, additive E942, the gas that has aerated whipped cream since long before anyone called it a charger. What changes between a bulb and a tank is not chemistry. It is handling.
What actually changes
With bulbs you reload constantly, and every reload is a small drop in pressure while the cartridge seats. With a tank you draw from one continuous supply, so the last portion comes out like the first. Chefs notice this in texture before they notice it on the invoice.

What you need
One thing surprises people moving up from 8g bulbs: a tank does not screw into the dispenser. It feeds through a pressure regulator and hose into the same inlet the bulb holder uses. You buy the regulator once and it works with every tank and every brand we carry — but if nobody tells you, your first delivery arrives and you cannot use it.
Beyond that: the dispenser you already own, and somewhere cool and upright to stand the tank between services. That is the entire kit.
Why food grade is the part worth checking
Nitrous oxide is manufactured at several grades, and only food grade is intended to touch what you serve. The purity figure tells you how little else came along with it. Every tank we sell is food grade. Where the manufacturer publishes a purity number we print it on the product page; where they do not, we leave it blank rather than guess, which is why some of our listings are quieter than a competitor’s.
Working out which one
Two questions settle it. Which size depends on how fast you get through gas — start at tank sizes explained. Which brand matters less than most people expect, since the gas is the gas; what differs is fill weight, flavour options and price, which is laid out on 2kg whipped cream chargers.
If you want flavour, note that it is carried in the gas itself rather than added as a syrup, so it arrives without thinning your cream or sweetening it further. Those are in flavoured tanks.
